Malibu and Pineapple Juice Recipe
All you need are 2 ingredients to make my favorite Malibu and Pineapple recipe! I share instructions for how I make both a single serving and a pitcher for a crowd.

This is the time of year when I start to realize that my summer is nearly over and my shot at a relaxing beach vacation has passed me by. That’s when I go on “staycation”. I put up tiki torches, play relaxing beach-y music, invite friends over, and mix up tropical cocktails.

What is a Malibu and pineapple?
The Malibu and Pineapple is an easy mixed drink–usually 1 part Malibu to 3-4 parts pineapple juice, depending on how strong you like your drink. It can be garnished with a pineapple wedge or lime slice. I like to add extra lime for more flavor.

How I make a Malibu and pineapple for a party
This recipe as written is for 1 drink, but let’s face it, this drink is perfect to share! Here’s how I alter it for a party:
- Figure out how many people are coming to your party and adjust the servings — For example if you’re having 10 people at your party, you’ll need to 10x this recipe.
- Fill up a pitcher — to the pitcher, add rum, pineapple juice and ice. Stir and chill.
- Pour into ice-filled glasses — divide the pitcher contents equally among the glasses.
- Garnish — pineapple wedges or lime slices work just fine
What do I need to make a Malibu and pineapple juice?
This drink comes together quickly! Making a second or third batch is a breeze! To make it, you’ll need:
- Malibu Rum: Gives this drink its coconut flavor!
- Pineapple juice: I don’t know what it is about pineapple juice but it feels like I’ve wandered into a beach party every time I have it!
- Ice: Keeps this Malibu and Sprite drink perfectly chilled!
- Garnish: Slice up (optional) fresh pineapple wedges or lime slices. It will still be delicious without.
The secret to this drink really lies in the silky coconut-y Malibu Rum! It has a refreshing taste bursting with sweet pineapple flavor that helps the drink go down nice and smooth!
Don’t worry about using fresh pineapple juice–canned is excellent! Small cans allow you to pour just one or two drinks at a time.
Equipment needed
- Rocks Glass: A rocks is a short, wide glass.
- Bar Spoon: The long handle on bar spoons makes it really easy to stir and not make a mess.
- OXO Angled Jiggers: My go-to measuring tools for cocktails.
- Ice Cube Tray: You’ll need plenty of ice on hand to fill up your highball glass.

These are great ideas for tasty Malibu and pineapple juice cocktails. Here are a few ideas to get you started—try:
Soda water: I keep bottles of soda water or club soda in my pantry. This way, I don’t need to open a large bottle if I’m making a cocktail.
Blue Curacao: If you’re feeling adventurous, add blue curacao to give your Malibu & Pineapple a visually striking twist.

The Malibu and pineapple juice ratio
Here’s the right Malibu to pineapple juice ratio:
- 1 part Malibu Rum to 3-4 parts pineapple juice OR
- 1 oz Malibu Rum to 3-4 oz pineapple juice
You can adjust the ratio depending on how strong you like your cocktails.
Tip: Add lime for complexity!
For the BEST Malibu and Pineapple cocktail, I muddle lime to step it up!
I recommend muddling 1-2 lime wedges in the glass first. The drink begs for the brightness from lime to cut the pineapple juice’s sweetness! You can also use lemon, if that’s all you have.
